The Custom House on Poole Quay has recruited a top chef for its bar-bistro and a la carte restaurant.

Adam Phillips, 31, ran a successful restaurant in Southampton before being recruited to the popular eatery set in one of Poole’s most iconic buildings.

He has transformed the menu using mostly local products and is building a fine reputation for food.

Adam uses freshly caught fish from sustainable stocks and his team makes all the food themselves; including the beef burgers.
